Printing on fondant and sugar paste — professional confectionery decoration guide

Sugar paste and fondant are the universal foundation for confectionery decoration — cake covering, molded elements, personalized plaques. Printing directly on sugar paste replaces hand-painted decoration with automated professional-grade printing that preserves color vividness and high detail.

Printing on fondant and sugar paste — professional confectionery decoration guide

Sugar paste, fondant and modeling paste are the primary materials for confectionery decoration. They are used for cake covering, cookie glazing, personalized plaques on wedding and birthday cakes. Traditionally, decoration is painted by hand or using stencils, but edible inkjet printing technology lets you replace manual work with an automated process achieving photographic quality.

Why sugar paste is the ideal base for printing

Sugar paste is non-oily and has a dry texture, so edible ink absorbs well into the surface and dries within seconds without smudging or shrinking. Unlike creams or glaze, sugar paste does not change structure after printing — the ink stays on the surface as a thin colored film. Due to low porosity and the smooth surface of freshly kneaded paste, colors appear vivid even with a standard 720 dpi setting.

How printing on sugar paste works

The JetLT sugar paste printer has an adjustable-height platform — you can place either flat sugar paste sheets or molded elements up to 150 mm in height. The print head transfers CMYK edible ink from 2–3 mm away, without physical contact. A full color image is printed in a single bidirectional pass. An A4 sheet is printed in 2–5 minutes depending on detail settings.

Required surface

  • Sugar paste with a dry surface (no residual powder or oil)
  • Ideal thickness — 2–3 mm (too thin cracks, too thick is hard to separate from the cake)
  • Smooth, no micro-wrinkles
  • Freshly rolled paste or pre-prepared plaque elements

Applications in confectionery

  1. Central cake plaques with personalized photos (weddings, birthdays)
  2. Corporate logo transfer onto corporate cakes and gingerbreads
  3. Children illustrations and anime character prints on plaques
  4. Seasonal motifs — Christmas decorations, Easter egg imitations
  5. Café menu cards and tasting labels made of sugar paste
  6. Conference and event corporate decoration elements

Storage conditions and durability

A printed image on sugar paste is stored at room temperature, protected from direct sunlight and moisture. Standard shelf life — 3–6 months, preserving color vividness. If the plaque is placed on a cake with cream, it is recommended to apply it no earlier than 2–4 hours before serving — prolonged contact with wet cream can cause color bleeding.

Comparison with hand-painted decoration

Hand-painting sugar paste with edible dyes and a brush takes 30–120 minutes per plaque, depending on detail. Edible printer production — 2–5 minutes per A4 plaque, with no decorator time cost. For a batch of 10 plaques, labor savings — approximately 5–15 hours, equivalent to €60–180 of operational wages.

Price and payback

A specialized sugar paste printer costs from €1,800 net. The universal confectionery printer — around €2,200. Ink cost per A4 plaque — €0.15–0.30. The selling price of a personalized confectionery decoration — €8–25, depending on complexity. Average payback period — 4–6 months at 15–25 orders per day.

Frequently asked questions

Can I print on an already-prepared cake with a sugar paste cover? Yes, but the cake must fit under the printing platform (up to 150 mm height) and the surface must be dry. Do I need special inks for sugar paste printing? Yes — the same EU-certified JetLT edible inks used on cakes, chocolate and wafer paper. Does the print withstand freezing? Standardly, sugar paste products are not meant for freezing — storage at room temperature or in a cooled display case is recommended.
